This dipping sauce is easy to make and so much nicer and more authentic than serving finger food with sweet chilli sauce out of the bottle. You can make this recipe ahead of time and freeze for up to three months, just omit the cucumber. This dipping sauce goes beautifully with Chicken & Coriander Balls (see recipe here >>).
INGREDIENTS
Makes: about 1 cup
1/2 cup white sugar
1/4 cup water
1/4 cup lime juice
2 tsp chilli sauce
2 tsp chopped fresh coriander
2 tsp finley chopped cucumber (seeds removed)
1 small red chilli, seeds removed and finely chopped
METHOD
- Place sugar and water in a small saucepan. Stir over a medium heat without boiling until the sugar is dissolved.
- Simmer, uncovered, without stirring for about 5 minutes or until the mixture has thickened slightly.
- Take off the heat and stir in remining ingredients.
- Once cooled it is ready to serve.
